Bean gnocchi (dumplings) with speck


2 medium potatoes
160 g of beans
100 g of speck
30 g of butter
salt and pepper to taste
flour as needed.


Cook the beans; once cooked, mash them in a food mill.
Boil the potatoes, mash them and add them to the beans with a teaspoon of salt and handful of pepper.

Start to add the flour to create a soft and easy-to-cut mixture similar to that typical of gnocchi.
Form strips of dough and cut them into gnocchi.

While the gnocchi are cooking, fry the speck in butter.

Drain the gnocchi and pour them into the sauce; serve them with a sprinkling of Parmesan cheese.
